Buttermilk Biscuits

Cut 1/2 cup of shortening ( I use New Balance it has 0 Trans-fats) into 2 and 1/4 Cups flour that has been sifted 4 times with 1/2 tsp. baking soda, 2 1/2 tsps. baking powder, 1 Tablespoon sugar and 1 tsp. salt. It should look like the picture above.
Using a rubber spatula stir in 1 1/4 cup buttermilk, gently folding into dry mixture until all moistened. Using well floured hands place this dough onto a floured counter or wax paper or parchment paper, and gently knead and shape into a round, adding more flour to this to ease handling. Patt into circle about 1 inch thick. Cut with round cutter, place on baking sheet covered with parchment or well oiled. Brush tops with cream or milk. Bake on top rack of 400 degree oven for 10 to 12 mins. Remove and brush tops with butter. Check periodically while baking so as not to burn bottoms.
