Soup for dinner last night!
Needed:
2 cans Stewed tomatoes (Mexican Style)
1 can Tomato Sauce
1 lb. ground beef
2 cups Beef Broth
1 can red kidney beans, drained
1/2 onion, minced
1/2 green pepper, diced
3/4 tsp. Chili powder
3/4 tsp. Cumin
% or 6 corn tortillas sliced into strips, or taco chips broken up
Season to taste with salt and pepper
I toss the stewed tomatoes into the blender to break up the chuncks a bit.
Brown the ground beef, with the onion and green pepper. Add remaining ingredients, heat to simmering for 30 minutes. During the last 10 minutes add the sliced tortilla strips, or omit this and add broken Taco chips to individual bowls, as desired.
Topping suggestions:
Grated Chedder or Jack Cheese
Sour Cream
Green onions, diced
